I am a lifelong vegetarian (leaning vegan) living with a (very) carnivorous husband and three children, ages six, four and two. My daily challenge is getting everyone to eat his vegetables.
I know most kids are picky, but I think mine are particularly ridiculous. “Mommy, I don’t like fruits or vegetables,” Mr Four tells me regularly. And it’s true — he won’t eat even the yummiest things, like strawberries, watermelon, blueberries or grapes. Even if they are in something even yummier, like cake. Miss Two is the best eater of the three (not that that’s saying much), but she even eats olives and lentils.
I just knew that I was never going to have picky children, because I was going to always serve my children nutritious and delicious meals, and not give in to any silly prejudices or tantrums. Yeah. So here we are.
Since I spend an inordinate amount of time trying to think of ways to get my kids to eat healthy food, I thought I would record my best successes, and solicit my very creative family and friends’ best ideas, in the hope that they might spark some ideas for somebody else.
Love the blog! I will be trying your green rice this week 🙂
